In my premed years, I ended up taking a biology class with a lab, general chemistry, a psychology class, some social studies courses, and a few math classes. Taking as many classes as I could inline with the MCAT really helped me prepare for this examination.

Introducing yourself to the subjects before you actually take them is always great. I know a few people that did the same thing you have done, attended many biology, chemistry, psycho classes while in premed. Once they got to med they were thankful they had done it.
